Avocado Berry Salad
This deliciously healthy starter is a perfect start to a Christmas meal with a twist. Amounts depend on quantity required.
- Shred lettuce and dice the cucumber, and mix together.
- Peel and de-stone the avocado, slice thinly.
- Mix the lemon juice, cranberries and cranberry sauce together to make a sauce.
- Place the lettuce and cucumber onto a plate or in a bowl.
- Arrange the avocado on top.
- Spread the sauce over it and serve.
