Basic Soya Chunks
Soya chunks are made from the same ingredients as soya mince but is in chunk form rather than a mince. You can buy the dry soya chunks either flavoured or unflavoured, the choice is yours. The size of the chunks do vary but if you’re after small chunks and can only buy large ones, just follow the recipe and when cooked, cut to the desired size.
When finished, they can be added to casseroles, served in a stir fry or used as a filling for pies. You can also place the cooked chunks into a blender and make into a mince or burgers.
We have included a basic hydration method here.
- Pour the boiling water into a saucepan and add the yeast extract and brown sauce. Bring to the boil and stir until melted, reduce heat.
- Add the black pepper and soya chunks and bring back to the boil, then cook for 20 minutes on a medium heat.
- The chunks are now ready to use.
