Irish Cabbage Soup
This is a traditional Irish soup recipe which has been slightly altered to suit a vegan. Simply used your favourite stock.
- Peel and dice the carrot into small pieces.
- Wash and cut the potato into tiny cubes, leaving the skins on.
- Finely slice the leek. Peel and slice the onion.
- Put all the ingredients into a saucepan and bring to the boil.
- Reduce the heat to simmer and cook for an hour.
- Serve with bread.
