If you like mushrooms you will love this recipe. This is a mild version of Mushroom Bhaji, if you like your food hotter then just use a stronger curry powder.
- Chop up the tomatoes finely.
- Slice the mushrooms and place in a frying pan with 3 Tsbp of olive oil.
- Cook for 2 minutes on a low heat and add tomatoes, curry powder, mustard powder and ground ginger.
- Stir well and cook on a medium heat for 5 minutes.
- Add 2 Tbsp olive oil and turn up to a high heat. Fry for a further 5 minutes.
